This whisky, at 52.8% ABV, is aged in Ex-Sherry Oloroso and PX casks, which imparts a full-bodied character. The nose is intense and textural, featuring a complex blend of peat, oceanic and land influences. It evokes imagery of grilled seafood, notably scallops, and burning shrubs, intertwined with decadent notes of dried figs, dates, sour cherries, blackberry compote, and lemon zest. The spices of ginger and nutmeg are present but subtle, with an undercurrent of rough leather. A balsamic and mineral trace adds to the aroma's length. On the palate, the whisky asserts its marine essence with a significant salty presence, reminiscent of a grill loaded with crispy bacon slices, pineapple, and seafood, complemented by a spicy red fruit compote with cloves, pepper, and ginger. Earthy and balsamic elements are less pronounced but persist, while flavors of chocolate-covered coffee beans and burnt caramel emerge. The salty and grilled notes gradually blend with the balsamic aspect. The finish is long, encompassing seawater, spices, salted caramel, chocolate, black cherry syrup, and the fading warmth of dull embers. This image should capture the whisky's complex interplay of flavors and aromas, embodying its rich, peaty character and the unique influence of its aging process.
