Clyde May originally made moonshine (illegally made spirit). After his death in 1990, his son and heir Kenny May wanted to honour his father's memory by producing a legal whiskey with his father's recipe. By 2004 Clyde May’s Straight Bourbon was coined the official ‘State Spirit’ of Alabama. The notes on this Kentucky Bourbon are as follows, Aromas of vanilla, cocoa, cumin, grass and strawberry are present, and the palate has apples, caramel, wood and summer fruit with a long finish of pepper, vanilla and grass. This is what Alabama tastes like.
