Convalmore 1975 GM Rare Old is not just a whisky; it's a journey through a landscape of intricate flavors and aromas. In a period of the industry downturn, Convalmore was, unfortunately, one of many distilleries that closed in the early 1980s. It ceased production in 1985, and the site has since been used for other purposes related to the whisky industry, though not for distillation. While the distillery itself is no longer operational, its legacy lives on through a limited number of bottlings. These releases, primarily by independent bottlers like Gordon & MacPhail, are highly sought after by collectors and enthusiasts. They offer a glimpse into a bygone era of Scotch whisky production. Nose: This exquisite whisky opens with a delightful blend of honey drizzled over waffles, accompanied by light, fresh cream. Its rich and spicy aroma is beautifully balanced with notes of vanilla and light fruits, predominantly featuring pineapple, pear, and sugared lime water. The floral aspect, reminiscent of a dried flower display or potpourri, adds an intriguing dimension. The perfume-like quality is unique and indescribable, with a hint of sulfur and the scent of matchstick boxes with phosphorus-lined walls. Taste: On the palate, the Convalmore 1975 GM presents a medium strength, shining with a malty and bright character. It evokes the essence of barley and cereal, similar to cornflakes. The flavor deepens with notes of orange marmalade, mint, and thyme, and an herbal hint possibly akin to Angelica sinesis.
