Highland Park Shiel

The second edition of the Keystone series, the Shiel focuses on the hand turning of the malt as it germinates, this ensures the malt will absorb the highest quantity of peat smoke thus making the whisky later distilled from the same malt barley with a higher peaty smokey quality. And sure enough, when opening a bottle the intense smokiness stands out as well as eucalyptus and vanilla, the palate is peaty, vanilla and oak with a long finish of oak and peat.
