Kilchoman, Islay’s newest distillery—and one with roots potentially stretching back to Scotland’s earliest distillations in the 1300s—began production in 2005, reviving whisky-making on the island after a 124-year gap. This 2006 vintage spent five years maturing in ex-bourbon casks, developing a characteristically robust Islay profile.
