The Cabrach Distillery is a Scotch whisky distillery located at Inverharroch Farm in the Cabrach, Speyside, Scotland. It was founded in 2024 and is currently owned by The Cabrach Trust, which operates it as a Community Interest Company. It produced the first legal spirit distilled in the Cabrach in over 170 years, reviving a district once notorious for illicit whisky-making.

History

The Cabrach, a remote upland district straddling the Moray and Aberdeenshire border, was once one of Scotland's most notorious centres of illicit whisky distilling, reputed to have held well over 100 illegal pot stills at its peak before the trade was suppressed by the mid-19th century. After the Excise Act of 1823 legalised distilling, a small number of licensed distilleries operated briefly in the area, including one at Mains of Lesmurdie in the Lower Cabrach, but all had closed by the 1840s as the industry consolidated elsewhere in Speyside.

The modern Cabrach Distillery grew out of The Cabrach Trust, a registered charity established in 2013 to regenerate the fragile local community through heritage and enterprise projects. The distillery was built into renovated farm steadings at Inverharroch Farm that have stood since 1849, and was developed as the Trust's first major initiative, using barley grown locally, including crops raised on the farm itself. In November 2024 the distillery filled its first cask, marking the first legal spirit distilled in the Cabrach since the illicit-distilling era ended more than 170 years earlier. Its stillhouse includes the "Buck Still," a direct-fired pot still with an internal worm tub modelled on documented designs from the historic Blackmiddens illicit still (1825-1833), deliberately linking modern production to the district's smuggling history. As a Community Interest Company, the distillery reinvests 100% of future profits into regeneration of the surrounding Cabrach community.
