Chain Pier Distillery is a Scotch whisky distillery that was located in Granton, Edinburgh, Lowland, Scotland. It was founded in 2018 and closed in 2019, having operated for only about a year as a small pilot facility. It holds the distinction of having produced the first single malt whisky distilled within the City of Edinburgh in roughly a century.

History

Chain Pier Distillery was set up by John Crabbie & Co (part of Halewood Artisanal Spirits) in Granton, on Edinburgh's waterfront, as a small-scale pilot distillery. It was built to let the production team begin distilling and experiment with barley varieties, yeast strains, fermentation regimes and distillation techniques while the company's much larger permanent home, Bonnington Distillery in Leith, was still under construction. Bonnington's build had been delayed after archaeologists uncovered the remains of the historic Bonnington House on the site during excavation works. Equipped with a single 500-litre copper pot still, Chain Pier ran for roughly a year between 2018 and 2019, filling only 39 casks in total before production moved to the completed Bonnington site in 2019/2020.

Closure & Legacy

Chain Pier was always intended as a temporary, experimental operation rather than a permanent distillery, and it closed once its parent site, Bonnington Distillery, came online nearby in Leith. Spirit distilled during Chain Pier's brief life was set aside to mature, and in 2022 John Crabbie & Co released it as a limited inaugural single malt bottling of only a few hundred bottles, marketed as the first single malt whisky made in Edinburgh in around 100 years. Because so few casks were ever filled, genuine Chain Pier-distilled spirit is extremely scarce and of strong interest to collectors, effectively marking the opening chapter of Edinburgh's modern whisky-distilling revival before the story continued at Bonnington.
