Dublin Liberties Distillery is an Irish whiskey distillery located on Mill Street in the Liberties, Dublin 8, Ireland. It was founded in 2018 and opened to the public in February 2019, and is owned by the UK-headquartered spirits group Quintessential Brands. Housed in a centuries-old former mill and tannery building in Dublin's historic "Golden Triangle" distilling district, the distillery paused production in May 2025 amid a broader downturn across the Irish whiskey industry.

History

The Dublin Liberties Distillery opened in February 2019 following a roughly €10 million investment and two years of construction, becoming Quintessential Brands' flagship Irish whiskey venture. The site itself is centuries old, having served over the years as a corn mill and later a tannery dealing in rabbit skins before its conversion into a working distillery. Its location places it at the heart of the Liberties' "Golden Triangle," the neighbourhood that once housed the world's largest whiskey distillery, George Roe & Sons, before Dublin's distilling industry collapsed in the 20th century. From 2015 onward the area saw a revival led by Teeling Whiskey, Pearse Lyons Distillery, Roe & Co and Dublin Liberties itself. Production was overseen by master distiller Darryl McNally, who joined after 19 years at Bushmills, using 100% Irish malt triple-distilled through copper pot stills with an annual capacity of more than 500,000 litres of new-make spirit. In May 2025, Quintessential Brands paused production at the distillery, citing difficult market conditions, as part of a wider contraction that also affected other Irish whiskey producers around the same time. The visitor centre's public tours were suspended, though the brand continued retail sales of its existing bottled range. Financial filings reported in June 2025 showed Wells Fargo holding a charge over shares in Quintessential Brands' Irish arm as part of a refinancing. No confirmed public reopening date has been reported since the pause.
