Moffat Distillery is a Scotch whisky distillery located in Moffat, Dumfries and Galloway, in the Lowlands of Scotland. It was founded in 2023 and is currently owned by Dark Sky Spirits. It is notable as Scotland's first modern wood-fired distillery, using an open wood flame beneath its copper wash still rather than the gas or steam heating used almost everywhere else in the industry.
Moffat Distillery is the creation of Dark Sky Spirits, a company established in 2017 with the goal of producing "exceptionally drinkable" Scotch whisky. The distillery's site in Moffat was purchased in 2020, and construction began in March 2021. The visitor centre and distillery opened to the public in 2023, with commercial whisky production starting in February 2024. In November 2024 the distillery released its first wood-fired Scotch as part of its ARISE range. Its signature production method — spirit distilled over a live, hand-fed wood fire rather than conventional indirect heating — is presented as a deliberate return to older, more elemental distilling techniques, and sits alongside a stated ambition for the site to become self-sufficient and zero-waste by 2030. Alongside whisky, the distillery also produces a wood-fired gin, fruit whisky liqueurs, and a moonshine-style spirit called Moffat Moonshine. In 2025 it launched The Muckletoon, a blended malt Scotch created to mark the history of the nearby town of Langholm.
