Pearse Lyons Distillery is an Irish whiskey distillery located on James's Street in the Liberties area of Dublin 8, Ireland. It was founded in 2017 and is currently owned by Alltech, the agri-science company established by its founder, Dr. Pearse Lyons. The distillery is housed inside a lovingly restored 18th-century church, giving it one of the most distinctive settings of any working distillery in Ireland.
Pearse Lyons Distillery takes its name from Dr. Pearse Lyons, a Dublin-born entrepreneur who founded the global agri-business Alltech in 1980. In 2012, Lyons and his wife Deirdre discovered the disused St James's Church in Dublin's historic Liberties district, close to the Guinness Storehouse, and set about converting it into a working distillery while preserving its stained glass windows and architectural heritage. The restoration took roughly four years, and the distillery officially opened to the public in 2017. In 2019, the site expanded production to include single pot still whiskey, the style traditionally associated with Irish whiskey, reportedly the first new distillery in more than 25 years to produce it. Following Dr. Lyons's death in 2018, leadership of Alltech and its distilling operations passed to his son, Mark Lyons, continuing the family's involvement in brewing and distilling. Alongside whiskey, the site also produces Ha'Penny Spirits and Míl Irish pot still gin, and releases limited-edition single casks under its Camino Collection.
