Phoenix Park Distillery is a former Irish whiskey distillery that stood in Chapelizod, on the edge of Phoenix Park, Dublin, Ireland. It was founded in 1878, when the Scottish firm Distillers Company Limited (DCL) converted a former mill into a distillery, and it ceased production for good in 1921. Unusually for an Irish distillery of its era, Phoenix Park was built and owned by a Scottish company, and it existed largely to blend inexpensive Scottish grain whisky with small quantities of genuine Dublin pot still whiskey.

History

Phoenix Park Distillery (also referred to in period sources as the Chapelizod Distillery) was established in 1878 when the Distillers Company Limited of Edinburgh converted a former flax mill on the site into a working distillery. DCL's motive was commercial rather than purely artisanal: at a time when Irish pot still whiskey commanded far greater prestige and demand than Scotch — reportedly outselling it by as much as five to one — the Scottish combine wanted a genuine Dublin address and a small volume of authentic Irish pot still spirit that could be blended with its much larger stocks of cheaper Scottish patent-still grain whisky. The distillery was visited during this early period by the whisky chronicler Alfred Barnard, who documented it in his 1887 survey of the distilleries of the United Kingdom. It was, by most accounts, the smallest distillery in DCL's Irish and Scottish portfolio.

Phoenix Park closed in 1893, only to reopen in 1899 in a very different form: rather than resuming pot still production, it was recommissioned as a patent (Coffey) still grain distillery, reflecting the wider industry shift away from traditional Irish pot still whiskey toward cheaper, higher-yield continuous distillation. It operated in this form into the early twentieth century before finally ceasing production in 1921, a period that saw the Irish whiskey industry as a whole go into steep decline amid the loss of key export markets, the disruption of the Irish War of Independence, and the onset of Prohibition in the United States.
