Stannergill Distillery is a Scotch whisky distillery located at Castletown Mill, near Castletown, in the Highland region of Scotland. It was founded in 2025 and is currently owned and operated by Dunnet Bay Distillers Ltd, the Caithness-based company behind Rock Rose Gin. It occupies a restored 1818 grain mill on the NC500 tourist route near Dunnet Bay, combining an active distillery with a visitor centre and restaurant.

History

Stannergill Distillery is the whisky-making venture of Claire and Martin Murray, the husband-and-wife team who founded Dunnet Bay Distillers in 2014 and built it into an award-winning producer of Rock Rose Gin, Holy Grass Vodka, and Mapmaker's Rum. In November 2020 the couple acquired Castletown Mill, a derelict flagstone-era grain mill built in 1818 from traditional thick Caithness stone, which had stood empty for around 32 years. Rather than build a new facility, they set about restoring the historic mill building in their native Caithness to house a working distillery, describing the project as a chance "to restore not just a building, but a legacy."

The multi-year restoration was substantially complete by 2025-2026, and the site opened to the public with a distillery shop, guided tours, tastings, and The Grain Store restaurant and café, open seasonally from late May to the end of October. While Stannergill's own new-make spirit lays down in cask under a cask-ownership programme and the "1818 Society" (which offers members numbered bottles from the eventual inaugural release), the distillery has funded the ongoing restoration through The Saga Series: a limited-edition collection of ten-year-old blended Scotch whiskies, each release ("Saga") named after a historical figure connected to Castletown Mill, such as James Traill and William Mackenzie. Sagas 2 through 6 had been released as of 2026, with proceeds supporting the mill's upkeep.
