Stirling Distillery — Lowland Single Malt Whisky

Stirling Distillery is a Scotch whisky distillery located in Stirling, Lowland, Scotland, at the foot of Stirling Castle. It was founded in 2015 and is currently owned by June and Cameron McCann. Often described as one of Scotland's smallest whisky distilleries, it revived whisky-making in Stirling for the first time since 1852.

History

Stirling Distillery was established in 2015 by husband-and-wife team June and Cameron McCann, who had previously run an art gallery and gift shop in the city. In 2017 they purchased a former blacksmith's building, known as the Old Smiddy, on Lower Castlehill below Stirling Castle; the property required extensive renovation, having no internal flooring, electricity, or water when acquired. After restoration, the distillery opened to the public in 2019, initially producing gin using locally foraged botanicals such as nettles. In October 2023 the distillery produced its first whisky new-make spirit, marking the first whisky distilled in Stirling since an earlier Stirling distillery (operating 1816–1852, and for a time run by Catherine Laing, one of the few female distillery operators of that era) had closed 171 years earlier. Stirling Distillery's new-make spirit won Best Scottish New Make Spirit at the World Whisky Awards in 2025, and the distillery is now laying down whisky for a planned single malt release under the working name "James VI", alongside an independently bottled expression called Sons of Scotland.

Core Range

Stirling Distillery's own single malt is still maturing and has not yet been released; in the meantime the distillery has issued an independently bottled whisky, Sons of Scotland, and a Castle Rock whisky liqueur (2025). Its established core range centres on gin, including Stirling Gin, made with locally foraged nettles, and Battle Strength Gin (55% ABV), a navy-strength gin named after the nearby Battle of Stirling Bridge, alongside seasonal releases such as Stirling Winter Gin and Stirling Pink Gin.
