History and Distillery Origins
Phil and Simon Thompson, along with their family, transformed the Dornoch Castle Hotel into a celebrated whisky destination, where their passion for whisky, particularly pre-1960s styles, flourished. Their experience in curating an exceptional whisky collection fueled their desire to expand into distillation. In 2016, a successful crowdfunding campaign enabled them to convert an old 19th-century fire station on the hotel estate into the Dornoch Distillery. This distillery, equipped with four direct fire-powered Alembic stills—traditionally used in Cognac and essential oils distillation—represents a departure from conventional Scottish distillation practices. Utilizing brewer’s yeast instead of the typical M1 distiller’s yeast adds a distinctive fruit-forward dimension to their fermentation process.
Bottling Company and Product Range
Simultaneously with distillery operations, the Thompson brothers established their bottling company, Thompson Bros, to build their profile in the whisky industry. Alongside their own maturing whisky, which reflects older Highland distillery styles, they bottle a diverse selection of drams from various Scottish distilleries. Additionally, they offer single cask releases of rum and cognac, showcasing their versatility and commitment to exceptional spirits.
