Tipperary Distillery — County Tipperary Single Malt Whisky

Tipperary Distillery is an Irish whiskey distillery located at Ballindoney Farm, near Cahir and Clonmel, County Tipperary, Ireland. Its stills were commissioned in 2020 and it is currently owned and run by the Nickerson/Ahearn family. It is a genuine "grain-to-glass" operation, distilling home-grown barley from its own farm, and is notable as one of Ireland's few female-led whiskey distilleries.

History

The business behind the distillery, Tipperary Boutique Distillery Ltd, was founded in March 2016 by Jennifer Nickerson together with her father Stuart Nickerson (a Scottish whisky industry veteran and Master of the Quaich) and her husband Liam Ahearn, a sixth-generation member of the Ahearn family that has farmed Ballindoney Farm in Tipperary's Golden Vale for generations. In its early years the company sourced and matured whiskey while planning its own production site. Four copper pot stills, the largest with a capacity of 1,000 litres, were installed at Ballindoney Farm in May 2020, and the first cask distilled and matured on site was bottled by hand in November 2020. The distillery grows its own barley and draws its process water from the farm, giving it unusually close control over its raw materials for an Irish producer of its size. It has also positioned itself as one of Ireland's first solar-powered distilleries. Tipperary's whiskeys have since won awards at international competitions including the Berlin International Spirits Competition (where it was named Best Single Malt Distillery in Ireland in 2025) and the World Craft Spirits Awards.

Tipperary's core range centres on its Homegrown Barley single malt series, made entirely from barley grown on Ballindoney Farm and released in various cask finishes (including sherry, port, Rioja/sake and Rioja/mezcal finishes) alongside a Homegrown Barley Pot Still expression. Watershed Single Malt Irish Whiskey, bottled at 47% ABV using water drawn from the farm, and The Founders, a vatted malt Irish whiskey, complete the whiskey line-up. The distillery also produces The Big Field Poitin and small-batch gins.
