Bimber Whisky originates from a London distillery founded in 2015 by Polish émigrés, drawing upon a family heritage in traditional spirit production – ‘Bimber’ itself being the Polish word for moonshine. This inaugural batch, bottled in 2020, showcases the distillery’s commitment to natural fermentation, utilizing uniquely designed washbacks that encourage bacterial and yeast development for enhanced flavour. Matured exclusively in ex-Bourbon oak casks, the spirit offers a robust character at 51.8% ABV.
