Bimber Distillery, founded in London by Polish émigrés in 2015, honors a family legacy of traditional spirit production with each carefully crafted batch. This Single Cask #522/36, dubbed “Santa’s Edition 2025,” matured exclusively in a Pedro Ximénez (PX) Sherry cask, imparting rich dried fruit and spice notes. Bottled in November 2025 at a robust 57.3% ABV, it delivers a full-bodied experience characterized by intense sweetness and a complex, warming finish. The distillery’s unique fermentation process, utilizing naturally active wooden washbacks, contributes to the whisky’s distinctive character and depth.
