Crafted with a commitment to natural fermentation – utilizing deliberately unsterilized wooden washbacks to encourage wild yeast activity – this whisky embodies a distinctly characterful profile. Matured exclusively in Imperial Stout casks, it delivers a rich and complex flavour experience, hinting at dark fruits, roasted malt, and a subtle sweetness. Bottled in November 2022 at 51.2% ABV, this expression represents a small batch of only 1650 bottles, showcasing Bimber’s dedication to innovative and flavourful whisky production.
