Bimber Whisky originates from a London distillery founded in 2015 by Dariusz Plazewski, honoring his family’s Polish moonshining heritage – ‘Bimber’ itself being the Polish term for traditionally produced spirit. Crafted with a commitment to natural fermentation, Bimber utilizes uniquely designed wooden washbacks, encouraging bacterial and yeast activity to enrich the spirit’s character. This inaugural batch, bottled in May 2020, matured exclusively in ex-Bourbon oak casks, resulting in a whisky bottled at 51.8% ABV. Expect a spirit reflecting both its innovative production and the influence of American oak, offering a distinctive and flavorful experience.
