Garrison Brothers – Honeydew Bourbon (40%)

Garrison Brothers Honeydew Bourbon is a honey-infused bourbon from Garrison Brothers Distillery in Hye, in the Texas Hill Country. It is built on the distillery's Small Batch Texas Straight Bourbon, aged for at least three to four years in new American white oak casks, and bottled at 40%. For the infusion, used bourbon barrel staves are cut into small cubes, soaked in Burleson's Texas Wildflower Honey and left in a stainless steel tank with the bourbon for seven months. The nose brings elderberry syrup, wildflowers and honey pineapple cake, with toasted oak, caramel and vanilla. The palate is creamy, with golden honey, elderberry and caramel giving way to wood tannins, black pepper, cardamom and apricot. The finish is long and silky, with fresh flowers, sultanas, toasted bread, white chocolate and espresso.
