Highland Park Between You & I is a 16-year-old single malt Scotch whisky from Orkney, bottled at 48% ABV in a 750ml bottle. This limited edition is a collaboration with the Swedish Michelin-starred chef Björn Frantzén, and the first Highland Park to use virgin Swedish oak casks.
It matures in a combination of virgin Swedish oak, sherry-seasoned American and European oak, and ex-bourbon casks. It is non-chill-filtered and of natural colour.
The nose has honey, toasted nuts, heather smoke and ripe orchard fruit. The palate brings dark fruit, vanilla and caramelised oak, with restrained peat. The finish is long and warming, with wood spice, a hint of sea breeze and a faint wisp of smoke.
