Highland Park – Cask Strength No. 5

Highland Park Cask Strength No. 5 is a single malt from the distillery in Kirkwall, Orkney, where locally sourced heathered peat gives a subtle, fragrant smoke. The whisky draws on Pedro Ximénez sherry casks, first-fill European oak and ex-bourbon casks. The nose is spicy, with dried cloves, fresh oregano, crushed pine needles and lingering wood smoke. On the palate, sun-dried fruit such as prunes, dates and sultanas comes from the sherry, with liquorice and winter spices from the European oak, and cocoa nibs and light oak from the bourbon casks. The body is bold and oily, and the finish is spicy and rich, with sherried fruit and sweet spices.
