Highland Park Triskelion is a single malt Scotch whisky from Orkney, created by three of the distillery's whisky makers, Gordon Motion, Max McFarlane and John Ramsay. Their aim was to explore how wood and cask seasoning influence flavour.
It is matured in first-fill sherry-seasoned Spanish oak butts, American oak casks, ex-bourbon barrels and hogsheads, with a touch of refill casks for softness.
The notes are of Seville oranges, sultanas, raisins, sweet apricots and heather honey, balanced by aromatic peat smoke. The finish is warming, with crushed coriander seed and oak spice.
