Highland Park – Triskelion (70cl, 45.1%)

This is Highland Park Triskelion, a limited edition single malt bottled at 45.1% in a 70cl bottle. It is a collaboration between three Highland Park whisky makers: Gordon Motion, Max McFarlane and John Ramsay. They chose three main cask types to explore how wood and seasoning shape the whisky: first-fill sherry-seasoned Spanish oak butts, first-fill sherry-seasoned American oak casks, and first-fill bourbon barrels and hogsheads. A small number of refill casks were added for softness. The nose is described as Seville oranges, coriander seed, crème brûlée, cloudy honey and a hint of rose with light peat. The palate brings orange peel, apricot, cumin, vanilla and light smoke.
