Highland Park – Valfather (47%)

Valfather is a single malt from Highland Park on Orkney, bottled at 47% ABV. It is the final release in the distillery's Viking Legend trilogy and is dedicated to Odin, the chief of the Norse gods. It is heavily peated, and the strong peat and the strength are meant to reflect Odin's power. The series was designed by the Danish artist Jim Lyngvild, and each bottle carries illustrations from Norse legend. The nose is sweet and fruity, with fresh apples, pears and vanilla crème brûlée. On the palate, toasted cedar wood and fiery paprika sit alongside floral smoke. The finish is very long, with more floral smoke and sweet fruit.
