J. Henry & Sons Small Batch Bourbon

J. Henry & Sons Small Batch is a four-grain bourbon, with rye and wheat as the flavouring grains, from the Henry family farm in Dane, Wisconsin. It is made with heirloom red corn, a variety developed at the University of Wisconsin in 1939 and grown by the family since 1946. The spirit is distilled under contract, then returns to the farm to age in a dairy barn without temperature control, so the whiskey feels Wisconsin's full seasonal swings. The nose offers butterscotch, sandalwood, brioche, stewed cherries and figs. The palate is creamy, with caramel, vanilla and cinnamon, and the finish brings toasted oak, maple-soaked raisins and white pepper.
