Kaiyo 7 Year Old The Single is a Japanese malt whisky distilled on a Coffey still and aged for seven years in first-fill bourbon barrels. It is bottled at 48% ABV. The finish takes place in Mizunara (Japanese oak) casks, which are loaded onto a ship for a voyage of three to six months. The motion of the ocean and changes in air pressure are meant to speed up the whisky's contact with the wood. Tasting notes describe sandalwood, incense, pineapple and melon on the nose. The palate brings honey, vanilla fudge and coconut, then long pepper and ginger. The finish is medium to long, with fading spice, tangy orange and a touch of sea spray.
