Penelope Toasted Series is a finished straight bourbon from Penelope Bourbon of Bardstown, Kentucky, bottled at 50% (100 proof) and non-chill-filtered. It is made from a four-grain recipe of corn, rye, wheat and malted barley.
The bourbon is aged for 4 to 5 years, then given a second maturation in new American oak barrels with a heavy toast and a light char.
The colour is deep mahogany-copper. The nose is sweet and warm, with brown sugar, cinnamon pastry, toasted graham cracker and vanilla. The palate offers dark caramel, candied cherry and toasted marshmallow, and the long finish brings roasted oak, cocoa and cinnamon.
