Stellum Rye

Stellum Rye is a rye whiskey built on a 95% rye Indiana mash bill. A more barley-forward rye is added, along with barrels chosen from Kentucky and Tennessee. The result is a full, round mouthfeel with flashes of buttery sweetness over a spicy, tightly focused whiskey. Deep copper in colour, it has a nose of stewed apples, peaches and pears with baking spices, nutmeg, clove, light mint and liquorice. The palate opens with aniseed, cardamom and coriander, then lemon peel and tangerine, with green apple and spearmint as it breathes. The finish brings star anise, white pepper and mint, fading to honey-sweetened jasmine green tea. Water brings out candied lemon and orange peel over a mint syrup.
