Abasolo (70cl)

Abasolo is a Mexican grain whisky made from Cacahuazintle corn, a non-GMO Mexican variety grown in the highlands of Tlaxcala and Puebla. It comes from the only whisky distillery in Mexico, which sits at 2,300 metres above sea level. The mash ferments for more than 120 hours and is distilled twice in pot stills. The whisky then matures in oak casks in an open warehouse with a light roof and no walls, so it is exposed to changing temperatures and conditions. On the palate it is described as deep, with toasted corn, honey, vanilla, black tea and leather.
