This apple eau-de-vie from Caldiff, distilled by Roner, comes from selected apples of the Dolomites region. It is aged in barrels for three years, gaining aromatic complexity and palate softness. The nose shows quince, honey and light vanilla and sweet spice notes from the wood. The structure is balanced, with a persistent finish suited to slow sipping. It works as a digestif after substantial meals, with aged cheeses or fruit desserts.
