Ailsa Bay is a lightly peated single malt from the Lowlands, bottled officially at 48.9% in a 70cl bottle. The distillery was founded in 2007 and was built with the latest technology. That technology allowed its makers to produce a peated malt, which was a first for the Lowlands. It was also the first whisky to show a peat indicator (PPPM) and a sweetness indicator (SPPM) on the label, and it is described as balanced between those two profiles. Part of the maturation took place in quarter casks, small casks that speed up ageing through closer contact with the wood.
