Ailsa Bay Release 1.2 Sweet Smoke is a Lowland single malt made at Girvan Distillery in Ayrshire, bottled at 48.9% in a 70cl bottle. Sweetness and peat are both measured in ppm for every batch.
It is micro-matured: first in small Hudson Baby Bourbon casks, then in traditional American oak.
The nose is burnt sugar over fresh fruit, with vanilla, toasted oak, light peat smoke, honey and citrus zest. The palate opens with creamy toffee and malted biscuit before peat and pepper arrive, with apple, heather and smoky caramel. The finish is long, with wood spice, subtle smoke and lingering vanilla sweetness.
