Ailsa Bay Release 1.2 Sweet Smoke is a Scotch single malt bottled at 48.9% in a 70cl bottle, with no age statement. It is made to balance peat and sweetness, at 21 PPM phenols and 11 SPPM of sweetness.
The new make spirit first spends six to nine months in small bourbon casks of 25 to 100 litres. It then moves into virgin, first-fill and refill American oak casks for several years.
The nose offers cereal grains, golden syrup, smouldering oak, smoked bacon, caramelised apples and salted butter. The palate is fruity, creamy and smoky, with vanilla and balanced oak. The finish carries cinnamon and clove, gentle sweetness and peat smoke.
