Ailsa Bay Release 1.2 Sweet Smoke is a Scotch single malt bottled at 48.9% ABV, made to balance smoke with sweetness. It has a peat level of 21 PPM, measured before bottling, and a sweetness measure of 11 SPPM.
The new make spirit is first matured for six to nine months in small Hudson Bay bourbon casks of 25 to 100 litres. It then moves into virgin, first-fill and refill American oak casks for several years.
The nose is fresh cereal grains, golden syrup, smouldering oak, smoked bacon, caramelised apples and salted butter. The palate is fruity, creamy and smoky with vanilla, and the finish brings cinnamon, clove and peat.
