Ailsa Bay – Release 1.2 Sweet Smoke

This is a Lowland single malt from Ailsa Bay, the distillery founded in 2007 on the Girvan site. Release 1.2 Sweet Smoke follows the first Ailsa Bay single malt. Part of its maturation uses micro maturation, a method first applied at Ailsa Bay. The new make spends six to nine months in small casks of 25 to 100 litres that previously held Hudson Bay Bourbon. The nose has vanilla custard, phenolic ash, chalky grain and golden syrup, followed by bacon notes. The palate is meaty and peaty, with dry muesli and golden syrup. The finish is sweet, smoky and dry, with a little vanilla.
