Ailsa Bay Sweet Smoke is the 1.2 release from the Ailsa Bay distillery in the Scottish Lowlands, which was established in 2007. It is a peated single malt, at 22 ppm measured in the finished whisky.
The whisky spent its first six to nine months in small ex-bourbon casks before moving to full-size virgin oak and first-fill and refill ex-bourbon casks. Its sweetness is rated at 19 SPPM, a measure defined by master blender Brian Kinsman.
The nose brings sharp smoke with unripe pear, alongside clean oak and minerals. The palate is smooth and full of fruit with hints of smoke, and a little water draws out orange peel and tropical fruit.
