Alipús San Baltazar Mezcal Joven (1L, 47.5%)

This is a joven mezcal from Alipús, made from 100% espadín agave grown at 1,600 metres. It is produced in San Baltazar Güelavila by the maestro palenquero Don Cosme Hernández, and comes in a one litre bottle. The juice and the bagasse ferment naturally for six days in large vats, which keeps the flavour of the agave intact. The spirit is then distilled twice in a copper still. It is clear, with herbal and citrus aromas and a light smokiness. The palate is fairly dry, with a softness that recalls fresh agave, and the finish is smoky.
