Casòn Bianco is a white wine from Alois Lageder, a producer known as a pioneer of biodynamic farming in Italy. It is built around Viognier grown in the Casòn Hirschprunn vineyards at Magrè, in Alto Adige, on sandy, stony soil with dolomitic lime, at 230 to 360 metres above sea level. The vines are between 20 and 60 years old.
Fermentation starts spontaneously in barriques, and the wine then rests on its lees for 11 months before further ageing in larger wooden casks.
In the glass it is a bright golden colour. The nose is intensely aromatic, with candied fruit, summer peach, dried apricot, orange and a touch of exotic spice and vanilla. The palate is full and well structured, with toasted notes, a savoury edge and good freshness, and a lingering aromatic finish.
