Ampersand Opimus is a 15 year old Kentucky straight bourbon bottled at cask strength, 58.4% ABV (117 proof), in a 750ml bottle. It was released by Ampersand and Foley Family Wines & Spirits, with Chip Tate overseeing the programme.
After its main maturation the bourbon was finished for nine months in Tokaji wine casks from Hungary. The mash bill is 75% corn, 13% rye and 12% malted barley, and the colour is deep amber to mahogany.
The nose combines caramel, oak and vanilla with apricot, peach, honeycomb and raisin. The palate is rich, with toasted oak, plum, fig, spiced honey and cinnamon and nutmeg. The finish is long and warming, with oak, dried fruit and spice.
