Aqara Agave de Los Andes Agreste is an agave spirit from Caraz, in the Ancash region of Peru, distilled at 2,256 metres in the Andes by producer Marco Suarez Lara. It is made from wild Agave Americana Expansa Gentry and Agave Cordillerensis, harvested at about ten years old. The agave is steam-cooked for seven hours, fermented in stainless steel with some bagazo and double-distilled in small copper pot stills. It rests for at least three months without oak. The name refers to more green being left on the agave at harvest, giving a stronger agave character. The nose has moist earth. The palate is powerful and complex yet smooth, with tropical fruit, peach and quince, and the finish is long.
