Balcones – Baby Blue (75cl, 46%)

Baby Blue is a Texas corn whisky from Balcones, made from roasted heirloom blue corn and bottled at 46% ABV in a 75cl bottle. It is described as the first Texas whisky on the market since Prohibition. The blue corn is rich and oily, and the whisky is intentionally youthful, with a round nuttiness and roasted overtones. The mouthfeel is viscous. The nose is described as melted butter, kettle corn, vanilla and toffee, with cinnamon, nutmeg, fresh bread, honey, ground coffee and baking chocolate. The palate brings tropical fruit, a little apricot, brown sugar, candy floss, sweet lemon tea and smoked chillies. The finish is medium to long and warming, with late cinnamon and leather spice, mint and green peppercorns.
