Banhez Mezcal Jabalí (75cl, 47%)

A mezcal made entirely from 100% wild Jabalí agave, produced in the Ejutla region of Oaxaca by the Banhez Mezcal Cooperative, a collective of more than 35 families. Production uses earthen ovens lined with brick and stone, horse-drawn tahonas, natural fermentation and small-batch distillation. Banhez describes it as citric and light-bodied with a lively mouthfeel, carrying notes of lactose, wet stone, fermented fruit and herbaceous conifers.
