Barrell Craft Spirits blends the New Year bourbon each autumn as a toast to the year ahead, and this edition marks renewal and gratitude to the people who have supported the brand. The colour is wildflower honey. The nose is sweet with a little tang, with white chocolate and carrot cake with cream cheese frosting. On the palate, firm wood tannin meets sour apple candy, tart raspberry and pineapple. The finish is gentle and grassy, with green tea, pandan leaf and chocolate mint, ending in a peppery touch of grains of paradise.
