This is a 12 year old bourbon from Barrell, blended from barrels aged between 12 and 15 years and then finished in slow-toasted American oak casks. The finish is meant to add depth while keeping the bourbon's natural sweetness and structure. The nose is creamy and sweet, with a coconut confection note from the toasted oak. Classic bourbon notes have shifted: clover to potting soil, licorice root to aromatic bitters, and mint to fernet. With a splash of water, cherry jam moves towards black cherry soda, and brownie towards hot cocoa with marshmallows.
