Barrell Dovetail is a cask strength American whiskey finished in three kinds of cask: rum barrels, port pipes and Cabernet Sauvignon barrels from Dunn Vineyards on Howell Mountain in Napa. The name refers to the interlocking joint, and the blend sets out to bring the three finishes together in the same way.
Barrell sources finished barrels from established distilleries and blends them rather than distilling. This bottling is 61.27% ABV (122.54 proof), with nothing added and nothing removed, and the strength varies from batch to batch.
The nose offers dried fruit, molasses and dark berry over toasted oak and baking spice. On the palate come plum and raisin, tropical molasses and firm tannin, and the finish is long and drying.
