Barrell Dovetail is a blended American whiskey in a 75cl bottle, put together around a set of the brand's favourite flavours. Woody bourbon is joined by Dunn Cabernet, toasted French oak, Late Bottled Vintage Port pipes and black strap molasses casks. The blend took almost a year to get right, and the proof varies from one bottling to the next.
The nose mixes sweet and savoury notes, among them panna cotta, walnut oil, leather, smoked apricot, grapefruit peel, sloe gin and damson jam. The palate is darker and spicier, with cocoa, molasses, cola and nutmeg. The finish brings rose jelly, chestnut honey, hazelnut and Corsican mint.
