Barrell Dovetail Toasted is a Black Label Series release from Barrell Craft Spirits. It starts from the Dovetail blend of whiskeys distilled in Indiana and Tennessee, finished in rum, port and Dunn Vineyards Cabernet barrels. The blend then spent a further 33 months in toasted American oak.
It is bottled at cask strength, 61.9% ABV (123.8 proof), without chill filtering.
The nose combines vanilla bean, honeycomb, dark cherry and fig over toasted oak and caramelised sugar. The palate brings toasted marshmallow, roasted hazelnut, cocoa, leather and sweet pipe tobacco. The finish is long, with oak and baking spice giving way to dark, jammy fruit.
