Barrell Dovetail is a blended American whiskey bottled at cask strength, 61.45%, without chill filtration, in a 75cl bottle.
It combines a 10-year-old whiskey distilled in Indiana and finished in Dunn Vineyards Cabernet Sauvignon barrels with an 11-year-old bourbon distilled in Tennessee and finished in blackstrap rum casks and Late Bottled Vintage Port pipes. The blending took nearly a year.
The nose has canelé, panna cotta and crème de noyaux, then walnut oil and leather. The palate is cane sugar, molasses and dark cherries, moving to cocoa, burnt marshmallow, cola, nutmeg and Tellicherry pepper. The finish is long and sweet, with rose jelly, chestnut honey and Pineau des Charentes notes.
