Barrell Whiskey Toasted Dovetail (75cl, 61.9%)

A blended American whiskey from Barrell Craft Spirits of Louisville, bottled unfiltered at 61.9% ABV (123.8 proof) in a 75cl bottle. It starts from the Dovetail blend, a multi-source American whiskey on a rye-heavy base, normally finished in Madeira, Port and Bourbon casks. Here it is given a further finish in custom toasted barrels. Barrell describes toasting as caramelising the wood sugars, adding vanilla, caramel and toffee character. The nose is toasted oak, vanilla bean, caramelised sugar, orchard fruit and baking spice. The palate has toffee, brown butter, brûléed citrus, nutmeg, charred oak and dark honey. The finish is long and warming, with sweet spice and a little fruit.
